Lately, I have been working on seminars, workshops, new recipes, etc. for all of my wonderful patients. I have found a few new recipes that I wanted to test out, with my patients and my dietary needs in mind ( duh- right?) Here one of the ones I decided to test.
Currently, I have the pleasure of reconnecting and working with Chloe Paddison, whom I used to live down the street from, babysit, hung out at their ‘farm’ when I was growing up so we go way back, ha ….turns out she is a dietetic student in Boone, NC, she has also accomplished so much while she has been in school in the nutrition field, shes pretty awesome all around. She is an amazing personal chef that is working while she is in school… you should check out her website, Bare to Bountiful if you are in the Savannah, GA or Boone, NC area. Chloe has been working with me on a few projects and I came across her Peanut Butter Energy Bite Recipe and decided to make a few changes to suit my dietary needs and here is what happened…..
I made some adaptations for myself, I made fresh almond butter in my food processor…. which by the way is SUPER easy.
Just 1/2 cup of almonds
1/2 tsp celtic salt
1/2 tsp vanilla extract (optional)
Add it all into the food processor and let it blend until you have a nice, creamy texture. Store in an air tight container in the fridge to keep for about a week. If you don’t eat it all before then!
So check these out, they are my new favorite thing to grab in the morning if I’m running behind, they are a great snack before or after a workout as well. You can make them into balls like shown above or you can even make them into bars.
