Finally Fall, my favorite season!
So fall is my favorite season of the year, not only does it feel so nice outside… its PUMPKIN season! I love anything pumpkin. I wanted to share this awesome recipe that I stumbled upon by Knead to Cook that is so delicious and good for you!
Pumpkin Pie Roasted Almonds
Ingredients:
2 cups Roasted almonds
3 tsp Ground cinnamon
2.5 tsp Pumpkin spice seasoning
4 tbsp Organic agave or honey
1 tsp Vanilla extract
pinch Sea salt
Directions:
- 1. Preheat oven to 325°F
- 2. Line cookie sheet with parchment paper or foil.
- 3. Place almonds in a bowl; add cinnamon, spice, agave or honey and vanilla.
- 4. Toss together to coat almonds with spices.
- 5. Spread almonds onto cookie sheet and sprinkle with sea salt
- 6. Bake 15-20 minutes.
- 7. Let cool and serve.

Very true, I seem to have them as a staple in my kitchen year round as well. I tend to enjoy more pumpkin around this time of year though, colder weather, fall? Who knows but I agree, pumpkin seeds are definitely seeds to enjoy year round!
