Need something quick and easy to make in bulk for the week? Or just want a quick and easy lunch or dinner? Here’s one for ya!  

Quinoa Salad:

Ingredients:

1 medium tomato

2 cups cooked quinoa

2 cup of water ( for quinoa)

1 medium red bell pepper

1 medium yellow bell pepper

1/2 c. feta cheese ( or however much you would like to add, you can eye ball it!)

Parsley 1-2 tbsp

1 small cucumber

1-2 tbsp olive oil

Directions:

1. Cook 2 cups of quinoa, let cool.

2. Chop peppers, tomato, and cucumber in to small pieces

3. In a large bowl combine veggies, quinoa, olive oil and cheese. Mix together, serve cold and refrigerate leftovers.

This recipe is great to make a large amount to eat on all week!
